The farms of the sea—this is how the people of Yomitan refer to the coral-rich shallows off their coast, where they cultivate fish, seaweed, shellfish, and an array of other seafood. It is these waters by which guests at HOSHINOYA Okinawa will be spending their days, and which provide the inspiration for the Sicilian cuisine served at our main restaurant. Due to their similar geography, Sicily and Okinawa share many common ingredients in their cuisine. For example, both islands have traditional tuna-based dishes. Sicily is a major producer of lemons, which are often squeezed over dishes to add zest; in Okinawa, a type of small green lemon is used to imbue food with a refreshing tanginess. Meals at HOSHINOYA Okinawa incorporate ingredients that should be familiar to anyone who has enjoyed traditional Okinawan cuisine, but are prepared using techniques inspired by Sicilian cooking.
In the center of every guest villa or suite is an indoor patio, which also functions as a private dining room where guests can enjoy a meal enveloped in the refreshing ocean breeze and the relaxing sound of crashing waves. A long table provides a perfect space for setting a meal—whether alone, with a spouse or partner, or with friends or family. From a varied menu, guests can pre-order their meal, which is prepared in advance and then placed in the patio refrigerator. The patio's kitchen features can be used to bake, steam, or cook the meal at any time the guests wish and enjoy it at their own leisurely pace while gazing at the private ocean view framed by the patio window.
Matsunashi has an unusual background, having worked in film before moving into the culinary world. She is a graduate of the International Academy of Italian Cuisine in Lucca, one of the top cooking schools in Italy. After serving as chef at Hoshino Resorts hotel Risonare Yatsugatake and other establishments, Matsunashi joined the HOSHINOYA Okinawa project. It was her idea, after noticing similarities in the ingredients of the two styles, to offer a fusion of Okinawan and Sicilian cuisine. She is the first woman to serve as executive chef at a Hoshino Resorts establishment.
Meals are prepared with Okinawan ingredients using Sicilian culinary techniques. Guests may pair their food with a selection from an extensive list of Italian wines.
