Each dish is designed to make the heart flutter at first sight and melt after one bite. An element of surprise can generate conversation, which can heighten the enjoyment of the meal. For example, a plate fashioned from a single leaf of lettuce may remind guests of the numerous lettuce gardens they passed on their way to the resort. Satisfaction is also important. Guests are free to order an extra serving of any item from the hassun--an hors d'oeuvre platter that is a staple of kaiseki meals--so they may relish their favorite amuses-bouches. Delight, taste, relaxation, and languidness: these are what compose the Kasuke menu.
Kasuke's seating area runs parallel to the terraced hill, which is visible from the floor-to-ceiling windows. A single corridor winds past the seating area, bordered on the other side by tall granite walls. Together, these architectural elements bring to mind a traditional rural landscape, with the hill representing rice fields, the corridor and seating area symbolizing a river and its bed, and the walls representing distant mountains. Every dish I prepare is intended to evoke this scene. A meal in spring may involve the use of syrup made from magnolias, Japanese pepper, and a garnish of kerria flowers--all picked locally. Inake developed his culinary skills at a Japanese restaurant in Osaka, and then went on to establish successful dining establishments at hotels and ryokans in Japan. Although versed in traditional Japanese cooking, Inake incorporates Western culinary methods and ingredients into his cuisine to concoct new flavors that both surprise and delight. His many years interacting with customers from behind a counter--a setup often found in traditional Japanese dining establishments--allows him to be flexible in what he provides guests so that they may dine in luxury with their loved ones.

The secret ingredient of the shabu-shabu at Kasuke is the broth.
